CHICKEN BRYAN CARRABAS RECIPE

One of my favorite dishes when I go out is the Chicken Bryan Carrabas recipe. There isn’t really one close to where I live so I have gotten crafty and started making my own! I am pretty sure they put white wine in theirs and I have omitted it in this recipe, but I don’t miss it or taste a difference! The chicken is juicy and cooked to perfection. Adding the goat cheese is the perfect way to cut the acid from the lemon. I just had it for dinner but talking about it makes me want it again! CHICKEN BRYAN CARRABAS RECIPE INGREDIENTS

4 boneless skinless chicken breasts

fresh ground black pepper

kosher salt

2 tbsp extra virgin olive oil

ounces goat cheese

sun dried tomatoes 5 tbsp chopped

4 tbsp chopped basil

teaspoons finely chopped garlic

tablespoons butter

Juice of 1/2 large lemon

8 oz goat cheese

CHICKEN BRYAN CARRABAS RECIPE INSTRUCTIONS

Season chicken with salt + pepper on both sides

Heat cast iron skillet to med-high heat with olive oil

Add chicken to skillet + sear until golden on both sides

Lower heat to medium low

Add butter + chopped sun-dried tomatoes + garlic + butter + lemon

TIP: when handling garlic use this garlic press gadget and keep the smell off your hands!

Simmer until chicken is cooked through

Upon plating add 2 oz of goat cheese to top of each chicken breast

serve over mashed potatoes or your favorite pasta

Serve with steamed broccolini with fresh garlic + lemon + olive oil

(salt and pepper to taste)
