No Bake Pumpkin Pie Cheesecake Recipe – Fall
Thanksgiving isn’t complete without a No Bake Pumpkin Pie Cheesecake. Well at least for me it’s not because we all know how much I LOVE to cook… baking is another story but I’m working on it! I created this crazy delicious NO BAKE pumpkin pie white chocolate mini cheesecake recipe and I hope you guys gobble it up!
I had the pleasure of demonstrating how easy this recipe was on my friend Cindy’s Facebook Live show called Coffee Convo Wednesday! She ate the whole thing and I don’t blame her… it is THAT good. And you don’t have to worry about burning your house down. CAN I GET AN AMEN?
No Bake Pumpkin Pie Cheesecake Ingredients
1 can pumpkin puree
1/4 cup granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg
4 oz cream cheese (1/2 PACKAGE)
1/3 cup melted white chocolate chips
blend with a hand mixer until smooth
add to individual graham cracker crusts
shake and do “the drop” and make sure there are no air bubbles
refrigerate 2 hours or overnight
You can easily double this recipe for more people and top with homemade fresh whipped cream. Just add 1 cup heavy cream to a bowl, add a tablespoon of sugar, 1/4 tsp of vanilla and use a hand mixer until it is fluffy like whipped cream. There is nothing like it! SO SO GOOD!
